TEA

Tea defines the classic, traditional sense as pure, unadulterated dried leaf and leaf buds from the Camellia sinensis tea bush. This includes the three main Camellia sinensis varietals, each of which is comprised of dozens of local cultivars and country-specific breeds:        

Camellia sinensis var. sinensis ( small-leaf China bush)

Camellia sinensis var. assamica ( large-leaf India bush)

Camellia sinensis Cambodia (medium-leaf Java bush)

All wild-growing and ancient tea trees and subsequent generations of indigenous tea bushes and tea trees naturally growing in southwest China, Laos, Myanmar (Burma), northern Thailand and northern Vietnam 

All Camellia sinensis cultivars developed in the 20th and 21st centuries

Bali’s team suggests that tea enthusiasts explore two or more tees from each class of tea and become familiar with the flavors, textures, and aromas of each style of leaf manufacture.

Some teas require more supervision during steeping than others, and others are more sensitive to the temperature of the steeping water. You will quickly determine whether you enjoy just the oxidized teas - such as black and Oolong, only fresher-tasting, astringent greens, yellows, and tweeds, the complex, dark and highly oxidized oolongs, the earthy, full-flavored Pu-erhs, or whole tea, of every stripe and color.

If your day has periods of quiet time, a sweet and delicate green or white tea should add pleasure to contemplative moments.
